Heat one tablespoon of oil in a large saucepan. Put 3 or 4 popcorn kernels into the oil and cover. When the kernels pop, add 50g of kernels in an even layer. Return to the heat, once the popping starts, gently shake the pan by moving it over the heat. When popping slows to several seconds between pops, remove the pan from the heat and decant into a bowl. Add melted butter or salt to taste. If using a popcorn maker, follow the manufacturer’s instructions.
