Level up your lunchtime with this light and refreshing vegan falafel buddha bowl. It’s packed full of inviting flavour and colour to make sure that your lunchtimes are as healthy as they are tasty.

Ingredients

  • ½ pack vegan-friendly falafel
  • ¼ cucumber, cut into small chunks
  • 8-10 cherry tomatoes, halved
  • 1 spring onion, sliced
  • Large handful of spinach leaves
  • 1 x serving Eat Water rice *
For the guacamole
  • ½ avocado
  • Juice of ½ lime
  • Pinch of chilli flakes *
  • Pinch of lo-salt & black pepper
For the dressing 
  • 1 tablespoon tahini *
  • Juice of ½ lemon
  • ¼ teaspoon cumin *
  • Pinch of lo-salt & black pepper
  • Fresh parsley leaves

Method

Step 1 Bake the falafel according to packet instructions. Step 2 Prepare the rice according to packet instructions then drain. Step 3 Arrange the spinach, cherry tomatoes, cucumber, spring onions and drained rice in a serving dish or bowl. Step 4 Mash the avocado with the lime juice and chilli flakes then spoon in the middle. Step 5 Whisk together the dressing ingredients and a little water to achieve the right consistency (not too thick or runny).
