Blu cheese and walnut salad
Combining our Blu cheese with walnuts, create the perfect winter salad for easy lunches or afternoon snacks.

This easy-to-make vegan blu cheese and walnut salad is a simple and delicious alternative to the normal vegan starters and sides that you tend to find coming into the colder seasons. Bursting with flavour and tasty ingredients, this is a recipe that will even impress your non-vegan friends!

Prep time: 10 mins
  • 150g bag of mixed salad leaves
  • 30g H&B walnuts, toasted
  • 1 tbsp H&B pumpkin seeds, toasted
  • 100g H&B Vegan blu, roughly diced
  • 1 ripe pear, cored & sliced into wedges
  • 3 slices of sourdough bread, lightly toasted (slightly stale bread works really well!)

For the dressing: 

  • 6 tbsp olive oil 
  • 2 tbsp H&B apple cider vinegar
  • 2 tsp H&B manuka honey 
  • 1 tsp H&B Must-not
  • 2 tbsp Kefir
  1. Make the dressing by mixing all ingredients in a bowl until well combined. Season with salt and pepper to taste. 
  2. Add all ingredients into a bowl, toss in the dressing and serve!
