Vegan burger nourish bowl

Vegan burger nourish bowl with avocado, sweet potato fries and sauerkraut
This vegan burger bowl is packed with flavour and full of nutrients. Served with sweet potato chips, avocado and sauerkraut, it's a filling and tasty recipe perfect for lunch or dinner.

Method

Make up the burger mix as per the instructions on the pouch.

Cut the sweet potatoes into chips and lay them on a baking tray.

Drizzle over a little olive oil and some salt and pop into the oven at 200 °C for approximately 20 minutes or until cooked.

Cut the red onion into thin strips and add to a pan over medium-high heat and cook until nicely softened.

Cut the kale off the stalks and in a bowl, then drizzle them with a little extra virgin olive oil, some salt and optional tahini. Massage the ingredients into the kale leaves.

Cut the avocados into sections.

Lay the kale leaves in separate bowls and top them with the avocado, sauerkraut, sweet potato fries, cooked burgers and red onion.

Finish off with some coriander leaves.
