Manuka honey pancakes

Try these quick and simple Manuka honey pancakes that make a delicious treat at any time of day, created by fitness and parent blogger Father Fitness.

You might have pancakes down as a special treat…and that’s because they are! But these are also quick, easy, and balanced enough to whip up for any meal.

Fitness and parent blogger Father Fitness shares his go-to family pancakes. 

Topped with yoghurt, berries, and beneficial manuka honey, they’ll satisfy your sweet tooth and keep you energised through the day. 

Vegetarian

Ingredients

  • 1 medium-sized egg

  • 100g of flour

  • a pinch of salt

  • 150ml almond milk (or a milk of your choice) 

  • 150ml of water

  • 1 tbsp Manuka Honey

  • 1 tbsp Greek style yoghurt

  • 1 cup of fresh berries

Method

Add the egg, flour and salt into a mixing bowl and combine with a hand whisk.

Gradually add the water and milk, and continue to whisk to avoid lumps.

Heat up the pan (ideally you should use a non-stick pan, or you can lightly grease it to avoid sticking) and pour in the mix – enough to thinly cover the base of the pan. Allow the pancake to lightly cook, and then flip!

Once the pancake is cooked evenly on both sides, add to the plate and dress with a dollop of Greek style yoghurt, some fresh fruit and a drizzle of Manuka Honey for a sweet energy kick to see you through the day.
