Manuka honey flapjacks

Manuka honey provides a natural source of sweetness and has nutritional benefits you won’t find in sugar. 

With just 5 ingredients, it couldn’t be easier to rustle up this sweet treat.

Serves 8

Ingredients

  • 220g of unsalted butter

  • 1tsp of unsalted butter to grease the pan

  • 2 tbsp vanilla paste or essence

  • 6 tbsp Manuka honey

  • 350g of oats

  • 2 tbsp desiccated coconut 

Method

Pre-heat the oven to 170ºC or Gas mark 3.

In a saucepan, add together the unsalted butter, vanilla paste and 5 tbsp of Manuka honey and gently warm on a hob to melt before stirring together. Add the oats to the melted mixture and mix together until combined.

Gently oil the base and sides of a baking tray before adding the mixture. Evenly spread the mix across the tray and flatten.

Place the tray into the centre of the oven, and bake for 15 – 20 minutes or until golden brown. Once ready, remove from the oven and allow to cool.

Once cool, evenly smear a thin layer of Manuka honey across the surface, and then scatter a layer of desiccated coconut on top. Evenly cut the flapjacks into squares and serve.
