Garnished with peppy lemon thyme, this baked feta with manuka honey makes a showstopping vegetarian dish. 

Feta is usually crumbly, but it turns creamy and silky in the oven. Made from sheep’s or goat’s milk, it’s a lower-fat alternative to most other cheeses. 

We recommend serving with salad and plenty of crusty wholegrain bread to dunk.

Preheat the oven to 200ºC /180ºC fan/ gas mark 6.

Carefully dry the feta, place it in a small baking dish and drizzle over the olive oil. Sprinkle over the herbs and chilli with a little salt and pepper, then pour over the honey.

Place in the oven and bake for 15-20 minutes or until golden.

While the feta is baking, grill the sliced bread until golden and crisp.

Once the cheese is cooked, serve immediately with the crisp bread.
