Black bean & quinoa burgers

These black bean & quinoa burgers are tasty and vegan!

With summer holidays well underway, *hopefully* lots of warm weather and plenty of daylight, the opportunity to hang out with friends and family is endless. We know that this can be daunting, especially when juggling the options of missing out on tasty dishes or dealing with the aftermath of trying to digest them! 

At H&B, it is important to us that no one goes without. We want it to be possible to enjoy great food that is good for your gut, with a recipe that makes you feel great from the inside out!

Ingredients

For the burger patties

  • 240g black beans, drained weight
  • 80g quinoa, cooked
  • 50g breadcrumbs
  • 4 tbsp tomato paste
  • 1 tbsp tamari
  • 1/2 an onion, grated
  • 1.5 tsp smoked paprika
  • 1.5 tsp garlic powder
  • 1 tbsp dried oregano
  • 4 tbsp fresh parsley, chopped
  • Salt and pepper, to taste

To serve

  • 4 burger buns
  • 4 tbsp vegan mayonnaise
  • 1 head lettuce
  • 1 large beef tomato
Method

For the burger patties

  1. In a large bowl, crush the black beans with a potato masher. 
  2. Add the remaining ingredients for the burger patties and mix well until you have a moldable consistency.
  3. Taste the mix and adjust the seasoning as required.
  4. Brush a little olive oil over your hands and then divide the mixture into 4 then shape into burger patties.
  5. Heat a grill pan with a little oil.
  6. Place the patties into the pan and cook on a medium heat for 8 minutes or until browned.
  7. Flip the patties and cook for another 8 minutes or until the patties are cooked the whole way through.

To serve

  1. Spread the mayonnaise across the four buns.
  2. Place a few lettuce leaves onto the bottom half of the bun followed by a slice of tomato.
  3. Top with the burger patties and serve.
